Many alternative protein sources are already available on the market but are still marginally used in European diets. Giant Leaps uses biotechnological tools to optimise combinations of protein sources in different complex food model systems and develop healthy and sustainable meat, dairy and egg alternatives. 
We innovate processing technologies to bridge the current knowledge and regulatory gaps focusing on alternative proteins with potential for scale-up and industrial uptake in the European markets and diets.
